The Secret Mediterranean

Château Hotel, Spa & Luxury Villas on the Languedoc coast

Opening Summer 2021

Perched majestically on a hilltop surrounded by vineyards overlooking a tranquil Mediterranean lagoon, Château Capitoul is a magnificent Château estate and luxury sanctuary set in 245 acres of beautiful, unspoilt countryside in the Languedoc, South of France.

Like the best French wines, Capitoul is an ‘assemblage’ – a destination that blends the best aspects of traditional holidays options : the facilities of a luxury hotel, the practicality of villa rental, the authenticity of a working wine estate and the relaxed, yet attentive service of a private club.

A stay at Capitoul demands no compromise : you can choose a stylish room in the 19th century Château or the space and independence of a luxury villa with magnificent views across the vineyards and lagoon.

You will love

• No compromise holidays
• Close to the beach
• Neighbouring lively towns and villages
• Laid back luxury
• Fantastic views
• Tailor-made experiences
• Holidays with family & friends
• Luxury facilities
• Fine & casual dining options
• Natural setting
• Wellness
• Wine tourism
• Private & business events
• Heritage
• Dog friendly*

*Well behaved ones!

Facilties & Services

The original Château building accomodates eight refined hotel rooms, the spa and Mediterraneo our fine dining restaurant.

Across the courtyard is the winery with tasting rooms and wine shop where you will also find Asado, a lively but laid back brasero restaurant with its huge wood fired grills and spectacular terrace.

Integrated into the hillside adjoining the Château is an intimate hameau of 44 beautifully crafted self-catering properties, all with private gardens, terraces and fantastic views, many with private pools. Here you will also find a Masterclay tennis court, boules courts and our huge infinity pool with its stylish olive grove terrace, pool bar and endless vineyard views.

25 acres of gardens and park surrounded by 220 acres of woodland, Mediterranean flora and vines, crisscrossed with trails for walking or exploring on our complimentary bikes.

Vineyard & wines

Planted in Roman times, the Massif de la Clape was the first Languedoc appellation to be granted AOC Grand Cru status. Today the area is recognized internationally as a superb terroir delivering world class wines.

Producing a significant share of Grand Cru wines, Château Capitoul has for centuries been an icon of La Clape. We first acquired the estate in 2011 and immediately embarked on a major investment program in both vines and vineyards. The result is an award winning range of elegant and superbly crafted wines which we believe hold their own against the best of France, Europe and the New World.

Château Hôtel

Eight elegant and sumptuous rooms & suites blend classical French style with art deco and art nouveau features. Vintage chandeliers and mirrors, supremely comfortable beds, bateau bathtubs and luxurious linen, not forgetting the customary views!

The Château building also houses the Mediterraneo fine dining restaurant and our Spa where a sensuous range of treatments are brought to you in collaboration with cult French spa brand Cinq Mondes.

Villas with Pools

Full of character and contemporary luxury and inspired by local architecture, the properties in the hameau combine natural and reclaimed materials with a clever use of space and light. The superb views will never disappoint.

Refined interiors take cues from both the aristocratic and agricultural heritage of the estate marrying the traditional and the modern : generous salons, high-spec kitchens, luxurious bedrooms with en suite bathrooms and superb fixtures and fittings throughout.

Outside you'll find large terraces for lagoon and vine-view dining, and gardens planted with over 100 varieties of Mediterranean plants and shrubs.*
Many of the properties also feature heated pools with retractable security covers.

*Note the gardens in the hameau are newly planted and so for now are sparse, rocky and immature rather than lush and green. Find out more below.

Restaurants & Bars

In the original Château dining room, Mediterraneo is an intimate, gastronomic restaurant where six bay windows drink in the view. Valère Diochet takes advantage of the huge range of local, fresh produce to deliver a confident flavour-led cuisine with a distinct pan-Mediterranean accent simultaneously rustic and elegant.

Asado is named for the wood fired grills and ovens that form its heart. Here local fish and regional meats are charred over vine wood and charcoal, accompanied by generous plates of seasonal salads and vegetable dishes from the kitchen garden. Inside a generous space with a theatrical design. Outside, a large sheltered terrace with dining and lounging areas to soak in the views on balmy spring and long summer evenings.

Spa & Wellness

In the cool cellars of the Château the spa sits an inviting and sensuous sanctuary for relaxing and reviving, a place where joie de vivre presides over rigid rules and clinical sensibilities.

Indulge yourself with one of our signature Cinq Mondes treatments or relax in the solarium with its heated indoor pool with massage jets, hot tub, aromatherapy sauna and hammam.

The spa garden is a tranquil oasis of Mediterranean flowers, herbs and aromatics, dotted with cocoon-style loungers for one or two with their own terrace and great views over the lagoon.

Holidays without compromise

Since we opened our first property Château Les Carrasses in 2011, we have been welcoming families to our estates which provide fantastic, no compromise holidays for the whole family.

Our formula blends exceptional hotel facilities and service with luxury fully equipped self-catering properties for small or large families with catering adapted for children. A specialised concierge service for family activities, kids club and babysitting. A huge communal heated pool, complimentary bikes, tennis court, large grounds and gardens and plenty of space to explore...

We look forward to welcoming you for your family holiday in the Languedoc, South of France.

The Gardens

With breathtaking views of the flamingo-dotted lagoon the gardens at Château Capitoul have been created by world renowned landscape designer James Basson, four times Chelsea Gold winner including 2017 Best in Show.

James worked with legendary botanist Olivier Filippi to develop a palette of Mediterranean plants specifically adapted to the dry, rocky landscape, capable of prospering without fertilisers or herbicides, and critically without drawing on that most precious of natural resources - water.
The gardens reflect his naturalistic style combining new planting and the existing gardens to ensure that over time the newly created spaces integrate perfectly into the surrounding landscape.*

James has used a palette of over one hundred species, where holm oak and Aleppo pine are under planted with field maple and judas trees, filled with alternating drifts of sculptural Mediterranean forms of euphorbia, lavender and rosemary, designed to deliver sensual waves of seasonal change emblematic of the landscape of the Massif de la Clape.

*Note the gardens in the hameau are newly planted and so are for now sparse and immature rather than lush and mature.

The Environment

Every aspect of the restoration of Château Capitoul has been carefully weighed to preserve and enhance the natural environment and rich architectural and social heritage of the Château, while simultaneously breathing new life into the estate, placing it once again at the heart of the local community.

We consider ourselves temporary custodians of the estate at Capitoul, and this approach informs everything we do: from dry gardens to environmentally friendly pools, low emission equipment to organic waste treatment, ecologically friendly design and construction to chemical free cleaning and extensive use of home grown and local produce.

You can find out more about our approach to sustainability.

Region & Activities

Stretching lazily along the Mediterranean from the Côte d’Azur to the Spanish border, the Languedoc is the quintessential South of France, a region of vibrant fishing villages, endless beaches, rolling vineyards and cypress fringed olive groves, of medieval castles perched on rocky outcrops, thriving market towns and forgotten hamlets.

For all its feel of splendid isolation, Château Capitoul is just five minutes from the picturesque fishing village of Gruissan. The golden beaches of the Mediterranean are just a few minutes beyond or a comfortable cycle through the lagoon on our complimentary bikes.

Five minutes in the other direction is Narbonne, a small Roman city with a lively promenade culture of buzzy canal side restaurants and bars, and one of the most beautiful covered food markets in France.

And right beside us La Clape, once a wooded island harbouring Roman galleys, today the massif is a 37,000 acre conservation area crisscrossed with walking and biking trails with spectacular views over the Mediterranean and the surrounding countryside.

Bespoke Events

Château Capitoul's magnificent natural setting provides the ideal environment to reflect, motivate, exchange or unwind. Our dedicated team are here to create your perfect bespoke event weather professional or private.

From lunch on the pool terrace to dancing in the cellar late into the night, private dinners in the barrel room, wine blending or a simple boules tournament the estate offers a myriad of flexible options for a unique event.

For professional events we have modular spaces of 50 to 150m² for conferences, exhibitions, product launches or photo shoots, each fully equipped with the latest audio-visual, multiform lighting and high speed fibre optic connectivity.

Spacious and adaptable accommodation sleeps up to 240 guests.
